ACADEMY OF FOOD JAMS
Location: Franschhoek, Cape Town
Program: Educational
Client: Private
Status: In progress
The design for the Academy of Food Jams challenges the typology of a traditional kitchen space. Rather than enclosed, utilitarian environments, the academy is conceived as a series of fluid oval pavilions meandering through a lush agricultural landscape. Each pavilion sits beneath a sweeping circular roof canopy supported by slender columns, dissolving the boundary between interior and exterior and allowing chefs to work surrounded by natural light and the landscape that produces their ingredients.
Cultivated gardens laid out directly alongside the cooking pavilions reinforce the 'farm to table' concept, while solar panels integrated into the roof reflect the academy's commitment to sustainability. Generous covered veranda spaces invite collaboration and the spontaneous exchange of ideas.
